Chicken Soft Tacos

An old college recipe, created by Erin and definitely done better by her than me. Erin, was I supposed to use instant rice?! Because I must have added at least five times the amount of water the recipe called for just to get the rice less crunchy... . It was still crunchy in the end, just not as crunchy as it was initially.

It was still good, but.... . Maybe it's because I have PMS (yeah, sorry I broadcast it but why not), but I was pretty frustrated. Also, my current state of mind does not serve me well in the classroom, either, and I feel the need to admit it or reflect on it or something --- . I absolutely must have been the least interesting teacher in the state today. Because it took most of my energy to take deep breaths so I wouldn't freak out, I could hear my voice - almost like it was echoing - speaking in monotones and about nothing that was even remotely noteworthy. Plus, the day felt like it was three hundred hours long.
But my period is due tomorrow, so that's good.

Adam and I rented The Brave One last night because Michael Clayton wasn't in, and it's been better than I thought it would be. We've got the very end to watch tonight, so I think we'll do that soon so we can get some good sleep.

My advice? Buy a rice cooker. Making rice is so hard. I know people say it's easy, but it isn't. Until you have a rice cooker, if your rice comes out crunchy again try steaming it.

Isn't it sad that our expectations of movies are so low? This has to be the worst phase of movie making in my life time.

I believe it is instant rice. I NEED that recipe. Erin swears it's on the box, but i have yet to find it. Can you email it to me??

I agree with Suzie...movies are horrible lately, and if they are not horrible, they are so darn bloody, you can barely stand the violence. We saw No Country for Old Men - I think I actually only *saw* about 15 minutes. The rest of the time I had my eyes and ears shut - even though the story was really interesting.
