I made some lemon pepper chicken, too, but that wasn't pretty at all because I massacred it several times to see if it was done all the way. It tasted great, though.
Hopefully I actually do the dishes tonight so I'm more apt to make dinner again tomorrow. Adam and I made a deal (we usually split up unsavory chores this way), so he's gone to rent The Kite Runner. We both recently finished reading the book, so we're anxious to see the movie.
Happy Monday, All!

mmmm two of my favourite veggies :)
Yummy, asparagus!!!
What a treat! I like to roast mine in the oven with shallots, garlic and parmesan in olive oil.
About the chicken...I always have the same worry about it being cooked so I always finish it off in the over, usually at 325C for 15-20 minutes if I just grilling/fried the outside. It helps bring me peace of mind and keeps the chicken from getting pre-maturely massacred.
Hi Laura-
I LOVE asparagus too! Did you roast it with olive oil and salt/pepper?? That's super yummy and it's quick! Also- we make mushrooms with a little butter and red wine, and that too is delicious!
love ya~
Thanks for the suggestions Laura! :)
I'm having asparagus tonight. That and really prime corn on the cob are my favorite vegetables.
